Connect multiple banks on day one

In Settings > Banks add your primary account, then a secondary account from another bank. Label them clearly so you know which is which. When you share your Paylink, buyers can choose whichever bank is stable for them.

If a bank is down, toggle visibility off and leave the others active. No new link required.
